Almost winter season, almost time for having soup almost everyday. I was trying for the first time that type of tomato soup where you place all the tomatoes in the oven and then you just blend it. Of course, I added some herbs and spices.
Very simple, let's go to the ingredients.
12ounces of sunset wild tomatoes
1/4 slice onion
1/3 fresh garlic (no peeled)
4ounces goat cheese (I recommend to use half 2 ounces)
few basil leaves
olive oil
oregano, salt and black pepper
Place everything in a baking tray, add olive oil, oregano, black pepper and salt as you wish, then to the preheat oven at 400F, bake it for 20 minutes.
And I forgot that I also wanted to use goat cheese. So I took the baking tray out after 20 minutes baking, and I add a whole 4ounces goat cheese. I would recommend to add the half of it (2 ounces) next time because it is delicious but it has a strong flavor that can mask the rest of spices and herbs. Place in the oven again and cook for another 20 minutes.

After 40 minutes of cooking, I let the rest for 5-10minutes and then I placed everything in a blender, and that's it. You can reheat it in a pot if you want.
